Ingredients

Scale
  • 1.5 lbs fresh broccoli (cut into 1.5-inch florets)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 11 oz chicken sausage (sliced into rounds)
  • 16 oz frozen cheese tortellini
  • 4 tablespoons olive oil (extra virgin recommended)
  • 1 cup parmesan cheese (grated)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the broccoli florets, minced garlic, 2 tablespoons olive oil, salt, and pepper in a large bowl. Toss to coat the broccoli.
  3. Spread the broccoli on a large baking sheet in a single layer.
  4. Scatter the sliced chicken sausage over the broccoli.
  5. Roast in the preheated oven for 20-25 minutes until the broccoli is tender and slightly crispy, and the sausage is warmed through.
  6. Cook the frozen cheese tortellini according to package instructions during the last 10 minutes, drain, and set aside.
  7. Remove the pan from the oven and stir in the cooked tortellini, 4 tablespoons olive oil, and grated parmesan cheese.
  8. Sprinkle red chili flakes if desired, and return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  9. Allow to cool slightly before serving warm.

Notes

Make-ahead: Prepare broccoli and sausage in advance and keep in the fridge for up to 24 hours before roasting. Leftovers can be stored in an airtight container and reheated.
