Description
A cozy, creamy one-pot meal that combines chicken and orzo in a delightful sauce, perfect for weeknight dinners or romantic evenings.
Ingredients
Scale
- 1 pound chicken breasts
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Cook until browned, about 5 minutes on each side. Remove the chicken and set aside.
- Add the chopped onion and garlic to the pot, and sauté for 2-3 minutes until softened.
- Include the cherry tomatoes and cook for another 2 minutes until they start to burst.
- Stir in the orzo, chicken broth, and Italian seasoning. Bring the mixture to a boil, then reduce heat and return the chicken to the pot.
- Cover and simmer for about 10 minutes, allowing the orzo to cook and absorb most of the broth.
- Gently stir in the heavy cream, adjusting seasoning with salt and pepper to taste. Cook for an additional 2 minutes until heated through.
- Serve hot, garnished with fresh basil.
Notes
Customize with lemon juice, spinach, or Parmesan cheese for extra flavor. Make chicken ahead of time to save cooking time.
