Description

A comforting French onion braised chuck roast, infused with rich flavors and topped with melted cheese, perfect for chilly evenings.

Ingredients

Scale
  • 3 lbs chuck roast
  • 4 cups onions, thinly sliced (about 4 large onions)
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded Gruyère cheese (or your favorite melting cheese)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the chuck roast: Season the chuck roast generously with salt and pepper on both sides. Allow it to sit at room temperature for about 30 minutes for even cooking.
  2. Sear the meat: In a large, heavy-bottomed pot, heat the olive oil over medium-high heat. Add the seasoned chuck roast and sear for 4-5 minutes on each side until golden brown. Remove the roast and set aside.
  3. Caramelize the onions: In the same pot, add the sliced onions. Cook over medium heat, stirring often, for about 20-25 minutes until the onions are deeply golden and caramelized. Add the minced garlic and cook for another minute until fragrant.
  4. Deglaze the pot: Pour in the beef broth and Worcestershire sauce, scraping up any flavorful brown bits stuck to the bottom of the pot.
  5. Add thyme & roast: Return the seared chuck roast to the pot. Sprinkle the thyme over the top and bring the mixture to a gentle simmer.
  6. Braise the roast: Cover the pot and reduce the heat to low. Let it braise for 180-240 minutes, or until the meat is fork-tender and infused with all those comforting flavors.
  7. Top with cheese: Once the roast is done, preheat your broiler. Carefully transfer the roast to a baking dish, and spoon some of the rich onion broth over the top. Sprinkle generously with the shredded Gruyère cheese.
  8. Broil until golden: Place under the broiler for 2-3 minutes, or until the cheese is bubbly and golden. Keep an eye on it to avoid burning!
  9. Serve: Let it rest for a few minutes before slicing. Serve with freshly chopped parsley on top and that delicious onion broth on the side.

Notes

For added flavor, consider stirring in mushrooms or incorporating different vegetables during cooking.
